That is a fair start, but it undersells a spirit that can taste of green pepper, wet stone, tropical fruit or wildflowers, depending on the agave and the hands that made it.

Sip, never shoot

We serve mezcal in a small clay copita for a reason. Its wide mouth lets the aroma open up. Take a small sip, hold it on your tongue for a moment, and let it coat your mouth. The second sip always tastes better than the first.

Para todo mal, mezcal. Para todo bien, también.

Start with Espadín

About nine in ten mezcales are made from Espadín, a cultivated agave that is balanced and approachable. Once you know what you like, move on to wild agaves such as Tobalá, which takes up to fifteen years to mature and tastes softer and more floral.

What the orange is for

The orange slices and sal de gusano that come with a pour are there to refresh your palate between sips. Try a taste of orange dipped in the salt, then go back to your mezcal and notice how the flavour changes.

If you want to explore, our Mezcal Flight is the easiest way in: three pours, three agaves, and a server who will talk you through each one.

Smoky, floral, earthy.
